400 Conejos

400 Conejos is a brand whose production process is 100% artisanal and highly traditional, thus achieving the finest mezcals in the world and gaining recognition through multiple awards.

This brand, in the purest Mexican style, carries out its harvest entirely by hand, selecting the highest quality agaves which are later cooked in traditional wood-fired ovens. They are then covered with soil and cooked for 3 to 5 days. Once everything is cooked, it is stone-ground by a horse, and after this process, it undergoes double distillation in copper stills.

History

This brand is based on a mythological story from Mexico: The story of the 400 rabbits. According to legend, Mayahuel was a goddess of fertility and the agave plant, used for the production of pulque, a traditional alcoholic beverage similar to tequila and mezcal, though perhaps with less international fame. The thing is, this goddess was adventurous and one day she escaped from the sky with her lover Quetzalcóatl, another god, the god of wisdom and wind, in this case. This was something that the divine rules prohibited them from doing, specifically the rules of Tzitzimitl, Mayahuel's grandmother and a goddess of the stars in her free time, so, to hide together, the lovers turned into a two-branch tree.

Spoiler: It wasn't enough.

Tzitzimitl didn't mess around and took Mayahuel's disobedience very seriously. Along with her stars, she found the tree and attacked it, breaking one of the branches and killing Mayahuel.

Tough luck with grandma.

But every cloud has a silver lining.

You see:

Quetzalcóatl buried the remains of his beloved in the earth, where a tree and the first agaves grew. Furthermore, the Centzon Totochtin also emerged, who were gods of drunkenness and festivity and were the 400 children of Mayahuel. We can confirm she was the goddess of fertility. They are also known as "the 400 rabbits".

The rabbits fed on the fermented sap of the agave, called octli or neoctli, and humans learned to extract this sap and prepare pulque, which was a sacred beverage for the ancient Mexicans. This is the origin of this drink.

If you want to know a little more, we can tell you that each of these rabbits had a different personality, depending on the level of drunkenness they exhibited. In other words, the character of the person who drank pulque determined the rabbit they would adopt. They were also the protectors of the drunkards and pulque makers and were worshiped with offerings and ceremonies.

Great rabbits and a great history they have.
