If it is done at room temperature, it is called maceration, while if it is done at a higher temperature, the technique is called infusion.

It is common that, in order to obtain more flavour and aromas, as well as colour, both techniques are used.
A large majority of them contain citrus fruits, as the bitter component of these fruits is what whets the appetite.
