A Bit of History about 400 Conejos Joven Espadín - Cuishe...

Its production process is 100% natural and traditional. Master Mezcalero Don Tacho takes care to inspect the agaves every morning to ensure their good condition. When it's time for harvest, he selects the agaves in the best condition to achieve a quality mezcal. The cooking process is done traditionally, in a pit in the ground, carefully controlled to avoid burning, just like in the past. The grinding is also done with a stone, pulled by a horse. As you can see, it is a mezcal of tradition and pure flavor. It doesn't get any more Mexican than this.
