If you are looking for exclusivity, you have found it, this mix of Palomino and Pedro Ximénez will be the best option to put on your table.

Made from a blend of Oloroso and Pedro Ximénez, they have been aged separately for twelve years, after which the two wines are brought together to continue ageing in a Solera of 45 butts for a further three years. Thanks to the blending process, this wine has a particular silkiness and complexity. The concept of Designation of Origin refers to certain terms such as names of places, cities or regions, to name a product that is evaluated according to its origin and method of production. This concept is applied to a specific type of product, which also comes from a particular place.

 

Tasting notes. Sight, smell and taste

It has a nice dark mahogany colour, strong aroma of cocoa, mocha and ripe fruit. Once on the palate, it is a very complex wine, with a taste of caramelised orange and sultanas.

Pairing. How to taste it

Bodegas Lustau recommends serving it in a wide glass and drinking it at a temperature of 10-12° C and accompanying a delicious cheese board, foie gras or a rich dessert.

Designations of Origin of Marco de Jerez

All the wines that have been produced in the Jerez area, under specific traditional processes and meeting precise conditions, can boast of the "Jerez-Xérès-Sherry" and "Manzanilla-Sanlúcar de Barrameda" Designations of Origin. There is a "Regulation" in which we can find a description of the ways in which the product has to be produced, the varieties and the areas of production. The origin of the above mentioned Denominations of Origin is in the south of the Iberian Peninsula. Currently, the production area covers approximately 7,000 hectares. In Jerez-Superior we can find the vineyards in albariza lands, which due to their characteristics are the most suitable for the production of a superior quality wine. On the other hand, we have the Sherry Triangle, which also receives the name of "Zona de Crianza", and only in the cities of Jerez de la Frontera, El Puerto de Santa María, and Sanlúcar de Barrameda can the ageing process be completed for all the wines that are under the "Jerez-Xérès-Sherry" Denomination of Origin, so that in these cities we can find the Bodegas de Crianza. The Denomination "Manzanilla-Sanlúcar de Barrameda", only corresponds to the aging area that is located in that city, although for its elaboration the necessary grapes can be brought from any other area that is within the "Zone of Production", its aging must be obligatory in Sanlúcar de Barrameda. Finally, the wineries located within the Production Zone usually produce wines and musts.
