This bottle hides inside one of the best wines of Jerez de la Frontera, you will love this 100% Palomino.
This Lustau has been aged for four years under a veil of flor, then eight years in oxidative aging in Emperatriz Eugenia's winery, located in Jerez de la Frontera. It has been produced through the traditional system of criaderas and soleras. This is a system used for the aging of Rum, Brandy and, of course, Wine. It consists of the use of barrels, which are also called casks, which usually have a capacity of approximately 600 litres. A certain amount is periodically taken from each of these barrels to fill others. The purpose of this is to ensure that the younger wines have the nutrients they need so that the yeasts that form the veil of flor can survive. We also achieve that by mixing different vintages we can smooth out the differences and achieve a much more uniform wine.
Tasting notes. Sight, smell and taste
This sherry bottle presents us with a bright amber colour and a hazelnut aroma. On the nose we can appreciate notes of coffee and caramel. This classic sherry is full-bodied, balanced and very elegant. Its finish is long and dry.
Pairing. How to taste it
From Bodegas Lustau we recommend serving it at 13-14°C, accompanying a good hot broth, a plate of cured cheese and any poultry or very spicy dishes.
The Lustau Vineyards
The Lustau vineyards receive around 3,000 hours of sunshine a year and around 600 litres of rain. The hills of the area are mostly composed of very white limestone soil, also called "albariza". The particularity of this land is due to the fact that this area was under the sea thousands of years ago. Viña Montegilillo is the most suitable for growing Palomino grapes. From it we acquire the musts for the elaboration of the manzanillas, the amontillados, the finos and the olorosos. On the other hand, we have Viña Las Cruces, in its sandy soil is cultivated the Moscatel and Pedro Ximénez grapes, from there we obtain the sweet wines. The Cathedral style Bodegas de Lustau maintain a favourable temperature and humidity for Sherry wines. All this, together with the special care taken by the "arrumbadores" and the foreman, makes this winery a temple of good wine.
