Tasting notes. Sight, smell and taste

At first sight, the color of this whiskey is a pale tone similar to straw.

On the nose, we are talking about a whisky with a fruity, fresh and appetising citrus fruit with hardly any trace of smoke. Something similar to a trace of olive oil with a scented hand soap finish.

The taste is a pleasant beginning with a light smoke and a long finish. The mouthfeel is soft and pleasant with a slight acidity and some sweeter notes. What we can translate as a perfect balance between primary flavors.

The body of this whiskey is firm with a light presence, the finish of this whiskey is a persistent and slightly acidic.

 

Pairing. How to taste it

The best way to taste Caol Ila 12 años is in a low glass alone, with a couple of ice cubes and reduced with water and, of course, together with a good company of your best friends.

 

A little bit of history about Caol Ila 12 Years...

The name by which this whisky is known, Caol Ila, derives from Gaelic and its translated meaning would be "Sound of Islay" or, literally, "Strait of Islay". This is due to the location in which the distillery has been located since its foundation, on the banks of the "Sound of Islay", a Scottish strait between the islands of Islay and Jura.

The distillery was founded in 1846 by Hector Henderson until it was acquired by Bulloch Lade & Co. in 1863.

According to the 1871 census, at that time the director of the distillery was Duncan Johnston, nephew of John Johnston of Lagavulin and cousin of Laphroaig Johnstons, so that within the family there was another distillery under the command of the same. After several changes of ownership, in 1930 Scottish Malt Distillers Ltd obtained 100% ownership.

After World War II, when the distillery was closed due to restrictions on barley supplies, production continued until 1972 and from that year onwards the distillery was refurbished and a larger distillery built, continuing production from 1974.

Today, the Caol Ila whisky brand belongs to the British multinational spirits group Diageo.
