Tasting notes. Sight, smell and taste
When pouring a glass of Nectar Pedro Ximénez González Byass, we are struck by its wonderful intense dark mahogany colour. On the nose, sweet aromas are perceived with notes of sultanas, caramel and wood. On the palate, it is velvety, unctuous and with an acidity that mitigates the extreme sweetness and gives way to a long and tasty finish in which dried fruits, honey, syrup and fruit compote can be perceived.
Pairing. How to taste it
Nectar Pedro Ximénez González Byass is ideal to drink on its own or accompanied by tasty ice creams of other strong flavours, with dried fruits, with some intense flavoured cheeses or blue cheeses. It is also an ideal complement in confectionery to make sophisticated desserts that will be the favourite of the whole family.
A little bit of history about Nectar Pedro Ximénez González Byass...
The González Byass winery was inaugurated in 1835 in Jerez and after a long and successful history, it owns some 900 hectares of vineyards in which grape varieties such as Palomino Fino, Pedro Ximénez and Moscatel are grown.
At the winery, the expert master winemakers subject the grapes to a "soleo" process before vinification, so that the water evaporates and allows the sugar to concentrate. The grapes are then pressed to obtain the must and ferment it. After partial fermentation, it is placed in the Néctar solera where it will spend 9 years in American oak casks following the traditional Solera system.
