If you are looking for a special wine, look no further, Fino Jarana stands out especially because it has been produced following a biological ageing process, under the veil of flor, in Jerez de la Frontera and El Puerto de Santa Maria.

This wine of 100% Palomino variety has been aged in Las Cruces winery, in Jerez de la Frontera. Thanks to the climate of the area, the wines obtain a greater body and a more rounded style. The aging under the veil of flor, consists of a layer of yeasts, of different thickness and between grayish and white and belonging to the family of saccaromyces fungi, in addition, the yeasts protect the wine from browning, process by which the food acquires a brown shade due to certain chemical reactions.

Certain conditions are necessary to make a Fino wine, since its aging with a veil is very sensitive to temperature. It is necessary that the orientation is as fresh as possible and a soil of earth or albero. In order for the yeast to remain alive, there must be enough air inside the barrel in which the wine is to be aged. Its color is a straw yellow (the color of a young wine) although it remains several years in wood, at least three, as required by the rules of the Jerez Denomination, the blossom yeast does not allow the accumulation of amber and brown pigments. Viña Las Cruces, where this wine comes from, is located at the mouth of the Guadalquivir River, its sandy soil allows the planting of Moscatel, Pedro Ximénez and Palomino, and is the only plot in the whole D.O. with the three varieties

 

Tasting notes. Sight, smell and taste

A sherry bottle containing a straw-colored wine, its aroma is sharp, almond and mineral, reminiscent of apricot. When we taste it we discover a dry, saline and iodized wine. It leaves a slightly bitter finish.

Pairing. How to taste it

The best way to enjoy it is to accompany a good plate of Iberian ham, some oysters, any kind of seafood, white fish, salads and even sushi. Serve very cold, between 7-9°C.

 

A little history about Lustau

The history of Bodegas Lustau dates back to 1896, when it was founded by Don José Ruiz-Berdejo. His job was that of legal secretary but he dedicated himself to cultivating the vines on his estate Nuestra Señora de la Esperanza and then selling them to the large exporting wineries. María Ruiz-Berdejo Alberti, José's daughter, acquired a winery in the Callejón de Asta, which led her to transfer the ageing of her wines to Jerez.

In the 1940's, María's husband, Emilio Lustau, moved the winery to the Santiago neighborhood in the old part of Jerez. A few years later Emilio went from being a warehouse keeper to marketing his own wines and brandies. Papirusa, Jarana, Escuadrilla, Emperatriz Eugenia or Cinta de Oro were some of the brands Emilio created.

In the 80's Lustau became one of the most innovative companies in Jerez. During these years the Solera Familiar range was also created, the Almacenista and the first vintages began to be produced. In 1990, Bodegas Lustau became part of the well-known company Luis Caballero, dedicated to the production of spirits. More recently, in the year 2000, Lustau took over six 19th century wineries in the center of Jerez. Today, after being restored, they house the main facilities of this great brand.
