This wine is a safe bet, as it combines the delicacy and finesse typical of an Amontillado with the body and richness of an Oloroso.

Palo Cortado is made from 100% Palomino grapes and is of the generous type. In fact, the process that leads to a Palo Cortado wine is something totally involuntary, the oenologist does not provoke it at any time. During the oxidative process, certain characteristics are developed that make it different. The change it undergoes can be due to the grape, to the wood of the barrel itself... This difference makes it a clean, fine and complex wine.

 

Tasting notes. Sight, smell and taste

At sight we can appreciate an amber colour, in its aroma the dried fruits, the spices and some smoked notes predominate. It has a pronounced taste of hazelnut, hints of coffee, chocolate and vanilla. Concentrated with a long and elegant finish.

 

Pairing. How to taste it

It is the perfect companion for highly seasoned tins, foie gras, cheeses and white meats. Serve at a temperature of 13-14°C

 

A little history about Bodegas Lustau

Don José Ruiz-Berdejo, the court clerk, had a rather modest beginning, he cultivated the vines on his own estate, Nuestra Señora de la Esperanza, then sold them to the large export wineries. In the 1940s, his son-in-law, Don Emilio Lustau Ortega, decided to move the winery to the Santiago district in the old town of Jerez de la Frontera, where he gradually expanded his business as a warehouse keeper.

In 1945, Don Emilio, launched to market his wines and brandies under his own brands, which gave way to Papirusa, Escuadrilla, Jarana, Emperatriz Eugenia or Cinta de Oro. A few years later, exports began. In the 1980s, with Rafael Balao at the helm, Lustau became one of the most innovative companies in Jerez. In the same decade, it created the Solera Familiar range. In the 90s, Bodegas Lustau became part of the Luis Caballero company. Currently, Lustau wineries are located in six historic winemaking centres that they bought in the heart of Jerez.
