After the harvest, the grapes used to make this wine are sun-dried. The process of sunbathing the grapes of Pedro Ximénez is very important, it is about exposing the grapes to the sun so that they passify in a natural way. This way of treating the grapes means that it is not necessary to add sugar to the wine since it is through raisining that the wine acquires it naturally. The process consists of depositing all the grapes on a base that receives direct sun, with a certain distance between them so that the air flows better. The time it remains exposed will depend a lot on the climate of the area in which it is located, there must be specific conditions of humidity and temperature. This sherry has been aged for 12 years.
Tasting notes. Sight, smell and taste
When poured into the glass, we see a very dark mahogany color with iodine trim. Its aroma is intense, floral and citrus, and its flavor is very sweet raisins, in the palate it is full and very long with a subtle touch of acidity.
Pairing. How to taste it
In order to appreciate its full flavor, it is recommended to be served between 10-12°C. As a good dessert wine, it is ideal to accompany puff pastry, fruit-based desserts, or chocolate desserts.
The Reputable Wines of Jerez
The solera and criaderas system, with which these wines are aged, can only be carried out in the cities of Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda. The Control Board of this Denomination of Origin is in charge of keeping a very precise control on where and how these wines are made. There are 8 different types of sherry, starting with the mildest, Manzanilla, which is dry and has floral notes. Amontillado, has a topaz to amber color and you can already notice the touch of dried fruits. We continue with the Fino, made only from Palomino grapes, it has a more golden color and almond tones. The Oloroso, suffers a process of more oxidation and aging, has a darker color, and also much more body. Palo Cortado is fresher and full-bodied. Through the mixture of a Dry Oloroso and a Pedro Ximénez, the Cream is obtained, with caramel notes. From the Pedro Ximénez grapes we obtain the wine that receives the same name, it is sweeter than all the previous ones. And last but not least, the Moscatel, which comes from the type of grape with the same name, its taste is semi-sweet and has a delicious floral aroma.
