Cognac and brandy, two luxuries with solera
A real drink within reach of any pocket. These are cognac and brandy, two drinks that share personality, method of production and taste for nuances and delicacy on the palate. Our imagination flies when we mention this type of drink, recreating the halls of a royal palace, where an illustrious character delicately shakes a wide glass impregnated with a dark liquid while resting from his duties in an idyllically comfortable red armchair. Can you imagine the sensation of peace of our protagonist? That's what cognac and brandy offer everyone.
Composition of cognac and brandy
And what are brandy and cognac? Nothing more and nothing less than wines distilled and then aged for consumption. When a wine is not in optimum conditions for normal consumption, it is distilled, turning it into a "wine brandy" and transforming that Bacchus broth into a totally new drink. The result of this aguardiente, which comes out of the stills of transparent colour, is called holandas, because it was to this country where these distillates were traditionally transported.
After this process, the resulting product is aged in oak barrels, oxidizing and acquiring the characteristic ochre color of brandy and cognac. And that is where the method known as criaderas and soleras appears for the first time. This consists of stacking oak barrels in three heights with the brandy inside, where the upper part contains the youngest products and the lower parts the oldest. Little by little, the liquid is transferred from the upper part to the lower part, so that the product consumed, that of the lower part, is the result of a long period of ageing.
And what is the difference between cognac and brandy? Although in the bulk of the production both drinks coincide, between them the Denomination of Origin is distinguished, as cognac is made exclusively in the area of France which carries the name and a specific type of grape, and Brandy can be made in various areas, such as Brandy de Jerez.

History of cognac and brandy
As with wine, the origin of brandy is not entirely clear. If about 8,000 years ago it may be that wine consumption began, it is believed that in ancient Greece and Rome (about 3,000 years before Christ) began the production of brews distilled from wine for consumption. However, as we know it today, brandy appeared in the 12th century and gained the sympathy of consumers from the 14th century onwards.
