If you like to finish your meals with something sweet, a shot of this aniseed from El Tajo will make any dish round.
This Aniseed is made in the El Tajo Distillery which is located in Ronda, Malaga. This spirit is named after the plant it is made from, Pimpinella Anisum, which comes from Eastern Europe, India and some Asian areas. To make this liqueur, star anise, fennel and other fruits and seeds with anethole, which is an aromatic compound, are also used.
This liqueur is made through the distillation of different herbs and seeds, its alcoholic content is usually quite high, which makes it to provoke that b sensation in the throat when drinking it. According to the experts, when consumed after a meal, it modifies gastric emptying, thanks to its effect on the muscles, giving a certain help to the digestion of food in the small intestine.

A bit of history about El Tajo Distilleries
The beginnings of El Tajo were in a small village in Malaga called Jubrique, in 1895. Mr. Diego Ruiz Romero, owner of one of the many stills that were in the houses of the village, began by distilling the must that he obtained from the grapes in order to make the eau-de-vie. His son, Diego Ruiz Iborra, decided to expand the business to other markets, the way he did it was by pulling on horses so that his products reached different villages all over the Serranía de Ronda. A short time later, when it was possible, it was done with a small vehicle, which allowed him to reach customers who were a little further away.
In the 60s, with a view to the future and a lot of enthusiasm, he decided to look for another location for his factory in another town outside Jubrique. In 1969 he moved to Ronda, where he hired his brothers and opened the range of products among which we can find tequila, rum, fruit liqueurs with and without alcohol, vodka, brandy, gin.
In those days, the bottling, filling and labelling of the bottles was a process that was carried out manually, which limited the output of the products. That is why they acquired machinery capable of doing all this process, reaching 1,200 bottles per hour. In order to improve the manufacturing process, they acquired a new alembic that was different from the one they had in Jubrique, which had a smaller capacity. They also changed the way in which the alembic was heated, the old one was heated by direct fire using wood, and although the new one is also made with wood, it is done through a steam generating burner. In 2000 they were modernised and the wood burner was replaced by a diesel one. At the end of the 80s, its products already reached the whole of Andalusia, Ceuta and Melilla. Shortly afterwards, in the 90s, it exported its products outside the European Union. Nowadays, Destilerías El Tajo forms a business group with origin in Ronda, its main activity is the production of spirits and they also distribute national and imported brands.
