Once we have unloaded and transferred the wine, the fermentation is carried out at a controlled temperature in stainless steel tanks with the intention of obtaining a unique wine. The second fermentation is carried out in the bottle itself during nine months, thus achieving a festival of fine bubbles that remain in the bottle over time. After this, the wine is filled with a sweet expedition liqueur to give it a dry and sharp character.

The relationship with the aromas and nuances presented by the Huelva region is closely related to the cava in question, as well as the delicate acidity typical of wines from Western Andalusia. As a final result, we have a wine with all the characteristics of the Denomination of Origin that endorses it.

What differentiates this cava from the other of the brand, the Palacios de Doñana Semiseco, is that it has a lower amount of sugar, even so, a perfect balance between acidity, carbon and sugar can be appreciated.

 

Tasting notes. Sight, smell and taste

From the product we can appreciate, at first sight, a pale and bright color that surrounds a very fine and persistent bubble.

To the smell we speak of primary aromas with memories of apple and subtle touches of yeast and bakery.

The taste that this cava presents is elegant, good and acid with a very wide finish during the retronasal journey.

 

Pairing. How to taste it

The perfect companion to this semi-dry cava can be a cheese or an Asian lunch, a fish-based lunch or a fatty lunch such as foie, including snacks, starters, a good salad, or a delicious seafood.

 

A little bit of history about Palacios de Doñana Brut Nature...

In 1955 the cooperative was born from which the Bodega Privilegio del Condado would begin its work, although the origin of this work in the area where this cooperative was born goes back to the discovery of the New World, when the farmers of the area had no choice but to sell the grapes at very low prices.

A particularly good year for the farmers in terms of quality and quantity was 1953, which led them to a real revolution, to join together and form a cooperative to look ahead to the winemakers and compete in the market.

In 1962 they founded their own Designation of Origin, although, during the following decades, they always thought they should go further, that is why they founded the Bodega Privilegio del Condado, but it would not be until 2002.

In November 2019, Bodega Privilegio del Condado presents Palacios de Doñana, a cava produced in Almendralejo and with Denomination of Origin, because this area is an authorized production zone for the elaboration of this cava under the mentioned Denomination of Origin.

For more inri, this cava has the added value of having been supervised throughout the process by the winemaker Eladio Mateo, both in Huelva and in Extremadura, in order to select the base musts and control the proportions throughout the process.
