The Pacharán from Navarra is a product of the land, an exceptional liquor, completely different from other preparations from fruits.
Features
It is traditionally made from Sloe, which is marinated in aniseed liquor for about 3 months. After this time, the liquor is now ready.
Sloe is a fruit that belongs to the family of plums but has a size smaller that the size of cherries. It has a black-bluish color and an acid and astringent taste, that is why it has never been eaten as fruit.
Pacharán Zoco controls every step of the creation process. A method of traditional and exciting development, that has been passed from father to son and thanks to which a Pacharán of outstanding quality is obtained.
To obtain a high quality pacharán it must have the best sloe. Pacharán Zoco is aware of the importance of it choice and oversees the cultivation of their own Sloe.
The maturation of Sloe going to make much of the quality of pacharán. The ripe fruits provide greater intensity and quality of aroma and color, against green fruits that are very acidic and herbaceous. Pacharán Zoco controls the correct development of their sloe through its tasting in each of the plots from mid-August. The time of collection is set to the time achieves optimal maturation.
Pacharán Zoco holds the special designation of "Pacharán Navarro", which is complying with all requirements of the Regulatory Council. The seal of the Regulatory Board and the numbered label of each package of Pacharán Souk are the guarantee of a traditional product and quality controlled.
History
Pacharán already whas part of the lives of Navarre in the Middle Ages and was recognized and appreciated by them.
One of the protagonists in the important celebrations of the era, such as royal weddings, drinks also was used by members of the court due to its medicinal properties. The White Queen of Navarra, for example, took this liquor for medicinal purposes to ill in the Monastery of St. Mary of the Snows in the year 1441.
However it was not until the nineteenth century when it began to be used the term "Pacharán". At that time, the presence of pacharaneras it selling sloes in Pamplona markets became very common.
Currently, it remains a deeply rooted and widespread in these lands drink although it is also gaining recognition in and outside our country say Pacharán Navarro is to say Pacharán Souk.
In 1816, the family was in Velasco and the distillation of alcohol in the town of Viana, Navarra. In 1956, Ambrosio Velasco marketed the first brand pacharán: Pacharán Souk. Today, a drink taste dePacharán Souk is essentially the same as a hundred years ago; a maceration of sloes Navarre 100% natural anise containing no other flavoring agents or dyes.
