Edoné is a sparkling wine that surprises with its freshness, its presence at the table and its pleasant mouth. 100% Sparkling Chardonnay. Thousands of very fine bubbles filled with intense flavors and aromas.

Tasting Notes

Color: pale straw yellow color with greenish reflections, bright and clean appearance, with fine bubbles.

Nose: aromas of golden apple, pear, pineapple and fresh grapefruit and almond background. Very round, with good feelings.

Palate: The palate shows a very good roundness and very balanced, straightforward and medium drink, leaving some fruit amplitude at the beginning and traces of vanilla. This achieves a final persistent mouth with a balanced acidity.

Features

Edoné Cuvee de Maria, finds its origin in Albacete Finca El Moralejo situated at an altitude of about 1,000 meters, a paradise of pure nature.

If we talk about altitude and extreme temperature changes, we talk of wines by quality standard, the land gives an acidity that will give it ability to age, with the oak to be friendly, where the barrel sum and power the vibrance of the land.

Throughout the year, the vineyard is cared very gently to thereby achieve their optimal ripening fruit and qualities. Conduction jobs, pre-pruning and pruning get a production of 8,000 bottles/ha.

The production of this wine (WINE OF THE LAND OF CASTILLA) begins with the night harvest, removing grape field at a lower temperature, avoiding the hot end of summer. The grapes arrive at the winery in perfect condition, allowing it to remove its qualities of sugars and acids in optimal conditions.

A very gentle pressing is performed to obtain the purest, rich in sugars and acids must. The first fermentation is housed in small capacity tanks, followed by aging in French oak. Following the champenoise method, the second fermentation takes place in the bottle. It will remain in foster a minimum of 18 months in the cellars at a temperature of 12 degrees. After 18 months, a disgorgement is made to eject the sediment that originated the secondary fermentation. It is done in cold and in this way allows a brighter and cleaner product. With the expulsion of the sediment carried in disgorgement, a small loss of wine, which is supplemented by a circulation with a small amount of liquor with 4 grams of sugar per liter occurs. With the residual sugar this retractions are a BRUT product.
