Characteristics

Dom Pérignon is the most famous Champagne in the world, and for good reasons. A rigorous selection process in both the vineyard and the winery ensures that only the best grapes enter the Dom Perignon champagne. Chardonnay and Pinot Noir are used in roughly equal proportions.

Dom Pérignon Vintage is made with Pinot Noir and Chardonnay grapes from a single harvest. The harvest of 2004 is marked in the history of Dom Perignon. That year the harvest was of excellent quality.

Dom Pérignon is from Grand Cru vineyards in Ay, Bouzy, Cramant and Verzenay and Premier Cru vineyards of Haut Villers.

In its youth, Dom Pérignon shown incredibly soft, fruity and creamy with perfect balance and weight. As you age, acquires a wonderful toasty aromas and finesse, matched by very few of the other Great Marques.

History

Dom Pérignon was a17th century benedictin monk that has passed into history as the person who invented Champagne. His name was originally registered by Eugène Mercier. He sold the brand to Moët & Chandon, who used it as the name of their prestige cuvée, which was first launched in 1937.

The first vintage of Dom Pérignon was 1921 and was only put on sale on August 4, 1936, after the Great Depression. Dom Pérignon is a vintage champagne, meaning that only made in the best years, and all grapes used to make the wine were harvested in the same year. Many champagnes, however, are not of age, which means that the champagne is made from grapes harvested in various years.

Although the first evidence of the quality of local wines and dating from the thirteenth century, was this monk who knew better exploit the exceptional land surrounding Hautvillers Abbey. Born in 1639, Abbot Pérignon few years later become the spiritual father and visionary winemaking region of Champagne. His credo and motto: continuous search for improvement of sparkling wine. It was the beginning of a myth.

By that time reigned in France, Louis XIV. The Sun King, knowing good manners and excellence of the wines of Champagne, was quick to appreciate the extraordinary quality of the samples sent by Abbot Pérignon. That was recorded in numerous court documents in which, by order of the king, "straw-colored wine Father Pérignon" he asked. To the abbot, nothing could be as satisfying as the recognition of their king.
