The first goes back several centuries to a primitive Scotland, a land where the very common whisky was mixed with cream and a series of other ingredients with a clear purpose: to lower the alcohol content and camouflage its strong flavour under the sweetness.

The other is more contemporary, and takes us to Ireland, where the Baileys company is said to have found a way to effectively combine cream and alcohol, basically Irish whiskey, for marketing.

The Irish formula, which is the pioneer in the industry, starts with a high-temperature dissolution in water of sodium caseinate, a substance obtained from the precipitation of milk caseins. This emulsifying substance is added to a solution of sugar and cream, everything is stirred to obtain a homogeneous mixture and the result is then followed by the addition of neutral alcohol or Irish whiskey, in the case of Baileys.


The final touch is added, depending on the producer's recipe, by natural colouring and flavouring.
