BEGINNINGS OF GIN

Despite the high popularity of English gin, the spirit did not originate in England, nor has it always been so popular. In fact, the first written reference to this spirit dates back to 1945 and took place in the Netherlands. The same place where the first formula was created by Philippus Hermani and which was widely used in the distilleries of the time.

Under the reign of Spain in the Netherlands, the distillation of grain was forbidden, and it was not until 1713 that distillation was resumed.

In the meantime, the Oostindische Compagnie was founded in England, a key player in the production of gin in England. In 1602, the first English recipe was written, which was a great success. So much so that by 1621 there were already 200 registered distillers in the country.

At the beginning of the 13th century, the so-called "gin craze" began in England, with the population consuming 13,638,276 litres of gin. Yes, you read that right. Despite this great boom, Dutch gin was always better regarded than English gin.

In the middle of the 13th century, due to the weather, the harvests were bad, and this brought with it consequences such as the closure of distilleries and a rise in prices. However, as prices rose, so did quality, and it was the wealthy who bought up the best distilleries in the country.

In the early 19th century the poor quality distilleries disappeared and the stills were improved. This improvement meant that a purer spirit was obtained, so it was not necessary to add botanicals with such intensity. So, they started to add more delicate and softer botanicals to the gin, giving it a depth never seen before.

Throughout the same century and with the importance it had on this drink, gin spread throughout Europe and Charles Tanqueray and James Burrough, founder of Beefeater, joined the trend.

At the beginning of the 20th century, Prohibition took place in the United States, which increased the consumption of gin in the country. It was then that Dry Gin was born. While it became one of the most popular drinks there, in Holland and England its consumption declined.

In Holland, this decline was due to higher taxes and wars in the country. In England, the decline in consumption among the population is due to the arrival of its eternal enemy, vodka.

It was not until 1987 that gin was revived by Bombay Sapphire.

Spain is the third country in the world in which most gin is consumed, so in 2017 the first non-alcoholic gin arrived, covering a sector of the market that had been abandoned.

This sector is made up of athletes who do not want to overdo it with calories, pregnant women, those who have to drive but refuse to give up the moment, or simply those who do not feel like drinking alcohol. Elaboration

There are several methods for its elaboration, but the most common one consists of two steps:

Flavouring

Non-alcoholic gin consists of mineral water and the chosen flavourings. Flavouring can be carried out by maceration or infusion, leaving the components to steep for the desired time. These two methods differ in that the former is carried out at room temperature and the latter at warm temperature.

Both techniques can also be applied, achieving benefits such as the natural dyeing of the mixture.

Distillation

We know that two important things happen during distillation, one is that the alcohol is separated from the rest of the substances, and the other is that it serves to unite the notes and nuances selected by the master blender, resulting in a solid and homogeneous blend.

 

Types

Although it does not contain alcohol, this gin can be mixed in the same way as a traditional gin, so it keeps the same types. We have neutral, spicy or herbal, fruity, citric and floral gin.

Neutral

Neutral gin has a classic flavour, i.e. juniper predominates with a powerful aroma.

Spiced or Herbal

Spiced or herbal gins are those that have been infused with selected spices or herbs to achieve special aromas and flavours.

Fruity

Fruits such as strawberries have been used in their preparation. They are perfect for blending.

Citrus

Citrus gins are those made with fruits that add acidity to the mixture, such as lemon, lime or orange. They are very refreshing in character.

Floral

They have been macerated or infused with flowers that provide unique essences, such as hibiscus violet or orange blossom.
