Tasting Notes
Color: amber with hints of aged copper and edging very iodinated. It is clean and bright.
Nose: aromas of fruit (dates, grapes and apricots), nuts and caramel (toffee and almonds), toasted (Arabica coffee, pods, red tea). It has a complex and powerful nose, and brings fond memories to Malaga wines.
Palate: The palate keeps that same power, very smooth, round and provides a lengthy aftertaste of sweet raisins, bitter cocoa and licorice. It is very compote, almost sweet.
Characteristics
The most prestigious and oldest distillate tradition in Spain produced by distilleries El Tajo from Ronda.
This very elegant and subtle brandy has a sill centennial careful aging, aged in American oak casks from Jerez and Malaga, which have previously contained wine Pedro Ximenez. This will yield a marked varietal character which sets it apart from other Spanish brandies.
It is recommended to taste it slowly; since it has been many years resting in oak barrels, to become the incredibly complex elixir that you have in your hand right now.
History
The plant began operating in 1895 in Jubrique. A beautiful village nestled in Malaga Genal Valley. At this time Mr. Diego Ruiz Romero, founder and owner of one of the many existing stills in the town, began distilling grape juice extracted in this way to get the liquor.
In the mid 60s, with great enthusiasm and many sacrifices were determined to leave Jubrique and seek a more suitable location for the plant, in order to achieve the optimum development of the activity.
In 1969, the industry moved to Ronda, the capital of the highlands, since then staying in the same place. Once there the range of processed products also grew producing gin, brandy, fruit liqueurs and alcoholic expanded.
In the early 70s the brothers Ruiz Iborra are engaged in expanding areas of sales, so they have to create a network of dealers who in the late 80s occupied almost all of Andalucia. Subsequently, Ceuta and Melilla and into their 90s and exports were made outside the European Union.
Was recently acquired by Distilleries El Tajo in 1997, maintaining its hearth and the same barrels in which it was produced.
It is noteworthy that the "mother" or solera brandy `This is from the year of birth of the grandfather of the present owners in 1895, which portends a very exclusive product.
