The production of La Pelea begins with a Cold premaceration of grapes and fermentation at lower temperature than usual (24 °C). Approximately two weeks after maceration the complete distillation is complete and all the qualities of the grape is obtained. There is no fixed period to remain in the barrel, the aging process takes place for eight to twelve months. This process means that the wine reaches the consumer at its best.
