Cider, the pride of a region

Let's start with a question, what is the first thing that comes to mind when you pronounce the name of Asturias? If you don't mind, we'll answer for you: cider. It is true that the Spanish region is unique in many things, such as fabada, cachopo, cheeses such as cabrales or gamonéu, Asturian milk, its green and idyllic landscapes or its hidden coves and beaches. But nothing compares to the pride of Asturians with their cider, which has spread not only throughout the country, but the rest of the world.

But in addition to its name and flavour, it is also characteristic the way of tasting this exquisite Asturian delicacy. One arm extended to the sky, the other "touching" the ground. In the first is a bottle of cider, while in the second the so-called glass of cider. The objective: to get the liquid from the bottle right in the glass, or as it is traditionally known, to pour the cider. It can also be done with one of the multiple mechanisms that have been invented to make the work less hazardous. But let the one who has not tried to become a master pourer raise his hand. What we imagined, no raised arms ;)

Composition of the cider

Just as wine is made from grapes, cider is made from a common product: apples. It is harvested in mid-October, selecting those fruits that are best for consumption and washing them intensely with water to remove all the dirt they may contain. Next, the process of crushing takes place, where the blades break the pulp to facilitate pressing, a procedure that is carried out later and from which the must is obtained, before passing to the cider. This must is then transferred to a vat, where it undergoes the first and subsequent fermentations, where the sugar is converted into alcohol. Finally, it will be the master cider maker in charge of determining if the product is already optimal for bottling.

History of cider
